Kevin and I are on a short vacation in Whistler & Vancouver BC. We love it up here, it’s so worldly with all the different cultures and languages that are being spoken. Most people come to Whistler to hike, bike, explore, well we don’t. We come here to relax in such a beautiful setting which is only hours from home and to enjoy the food. Food is always amazing here, even hotels which typically just have standard bland food have some to die for meals.
An example was our lunch today at the Fairmont in the Upper Village. We enjoyed sitting out on the patio with full view of the mountains and beautiful gardens. While soaking up the sun we ordered lunch, a Flatbread pizza. Honestly I’m over flatbread pizza’s in restaurants because I feel they have been overdone, everyone has one on their menu. This version however was excellent. The flatbread was topped with BC Mushrooms, double smoked Bacon, Mornay sauce, shaved Parmesan, and truffled Arugula. I don’t even like bacon (yes I’m the only one on the planet) but the flavors were just amazing.
When on vacation I always love finding new food ideas and thinking up my own version of the meals we had once I get home. After enjoying an amazing lunch we walked thru the gardens looking for more inspiration to take home. You can rest assured there will be a flatbread recipe soon on this site working with these flavors.
