Date Stuffed Mushrooms

Talk about a Wow Factor. These mushrooms are always favorites each time I serve them. They can be served warm or at room temperature and this makes them super versatile because you can prepare them ahead. I really think these Date Stuffed Mushrooms are the perfect, quick appetizer for any dinner party. They pair perfectly with the fruit forward Due Anni red blend from Patterson Cellars.

  1. 1 cup panko crumbs
  2. ½ cup chopped prosciutto
  3. ½ cup Parmesan
  4. 1 shallot, minced
  5. ½ cup chopped dates
  6. Mayonnaise to bind
  7. Salt & Pepper
  8. 20 cremini mushrooms
  9. olive oil
  1. Combine all ingredients except mushroom caps in a bowl and stir to combine. Spoon mixture into mushroom caps and place on a baking sheet. Drizzle with olive oil and sprinkle more Parmesan on top of each cap.
  2. Bake for 20 minutes at 400 degrees.
  3. Serve warm or at room temperature.
