Apple & Red Cabbage Slaw

This is the perfect quick and easy slaw for year round. The tang of the dressing with the crisp apple and crunchy cabbage makes for a delicious accompaniment to a simple roast chicken or a hot bowl of soup.

  1. 1 apple cored and sliced thin
  2. ¼ head of red cabbage, shredded
  1. 1 tablespoon Dijon mustard
  2. 4 tablespoons olive oil
  3. 2 tablespoons red wine vinegar
  4. juice ½ a lemon
  5. salt & coarse pepper to taste
  6. grate ½ a clove a garlic
  1. Whisk together the dressing ingredients and toss with the apple and cabbage.
  2. Let sit at room temperature till ready to serve!
