christmas cookies and santaEvery family seems to have their “go-to” cookies that have been passed down from generation to generation — a family tradition. I wanted to share my family cookie tradition. These cookies are simple to make , if just a bit time consuming. But, they can be made in stages. The dough must be made ahead of time and chilled for at least 2 hours. You can then bake the cookies off, and then in another stage, frost and assemble. These cookies have very few ingredients, so high quality ingredients are recommended. Different brands of vanilla, for example will change the flavor, since vanilla really is the main flavoring. Please give them a try and enjoy. You won’t be able to eat just one (or two, or three). Be sure to save at least one for Old Saint Nick.

Cookie
  1. 1 cup butter, softened
  2. 1/3 cup whipping cream
  3. 2 cups flour
  4. Sugar for dredging
Filling
  1. 1/2 cup softened butter
  2. 1.5 cup powdered sugar
  3. 2 teaspoon vanilla
  4. Tint with red or green food coloring
Instructions
  1. Preheat Oven to 375 degrees.
  2. Mix butter, cream and flour together until all comes together. Form into a ball and wrap in plastic wrap and chill for at least 2 hours.
  3. Divide dough into two and keep one 1/2 chilled and on a lightly floured surface roll out dough. Roll out to 1/8 inch thickness and cut with a 1.5 round cookie cutter or other similar sized cutter.
  4. Pour sugar in a shallow bowl and place rounds into sugar and toss to coat, move to a parchment lined baking sheet. Prick each with a fork in 4 places and bake in oven for 7-9 minutes.
Assemble
  1. Cream the butter, sugar, vanilla and food coloring together. Frost bottom side of one cookie and top with another to form a sandwich.
