Earth Day Cocktail- Rhubarb Tonic

Rhubarb TonicToday is Earth Day and what better way to celebrate than with a great cocktail! I knew I wanted this cocktail to have the flavors of spring and also be earth friendly. Rhubarb was the perfect ingredient here, since it’s definitely the flavor of spring and it’s growing in a lot of our backyards. Rhubarb is tart so making it into simple syrup helps balance out the flavors. Toast the earth tonight with my Rhubarb Tonic.

Rhubarb Syrup
  1. 4 stalks Rhubarb, diced
  2. 1 cup sugar
  3. 1 cup water
  4. 2 lemons juiced
  5. ½ teaspoon vanilla extract
Cocktail
  1. 2 ounces gin
  2. 1 ounce rhubarb syrup
  3. Tonic
  4. Ice
To Make Rhubarb Syrup
  1. In a saucepan, combine all ingredients. Bring to a boil and then lower heat to medium and cook for 10 minutes, stirring occasionally. Strain mixture and press through a sieve. Discard solids. Syrup can now be placed into a pitcher for easy pouring. This makes a good amount of syrup. I haven’t tried it yet, but this syrup might be good over ice cream, too!
To Make Rhubarb Tonic
  1. Fill an old fashioned glass with ice. Add gin and rhubarb syrup and then top off with tonic. Stir and serve!
